Milwaukee native and longtime barman Tim Doherty always wanted to open his own pub, but the late night hours were turning his hair gray, so he chose to open a breakfast joint instead. Harking back to his Midwest roots, with waffles smothered in sauteed fruit, melted cheese on most everything, and friendly, personable, down home service, Tim created Syrup – a contemporary take on the classic pancake house.
With a legion of former bartenders and cocktail servers at his side, Tim cultivated a bustling early morning place that has an easy afternoon feel. His award-winning corned beef hash, handcrafted syrups, and signature green chili stew earned the restaurant a loyal following in a very short time, ensuring Syrup a coveted place in Denver’s Burgeoning breakfast scene.
